When we hear “harvest festival,” we usually think of crops, bread, fields, and the end of summer. Does an elegant tasting dinner come to mind? And yet- that’s exactly how this celebration of abundance unfolded during a unique evening, deeply rooted in the flavors of Pomorskie and prepared by four hands. Or rather, twelve – because local producers were also behind this culinary experience.
A collaboration between a fine-dining restaurant and the voice of the region
The evening was hosted by Tomasz Podsiadły, while the flavors were the creation of Sebastian Klamka, head chef at Sztuczka, and Piotr Liskowski, head chef and owner of the Gryfon restaurant in Jastarnia. The collaborative menu combined fine-dining precision with what’s closest to home: seasonality, local ingredients, and the region’s culinary identity. Products from Pomeranian culinary artisans also played an important role – vegetables from Klaudia and Marek at the Refarma organic farm, and breads from Anna and Sławek at Chleb z Drzewnego Pieca.
Good bread, fresh vegetables, meat, and fish
The meal began with flatbread from the oven in Malary, served with fermented cream butter and garum butter from Gryfon. Next, guests sampled, among other dishes, grilled leeks with kale, chive blossoms, and a sauce made from aged cheese; cod liver with sweet wine; chawanmushi with smoked trout, marinated roe, and nasturtium; and Hel anchovies under a crumble topping. Later in the meal, seasoned duck breast with yellow beets and pickled elderberries was served, and the finale belonged to the desserts: a sorbet inspired by dried fruit compote, ice cream made with browned butter and topped with sourdough bread foam, and tartlets with chestnuts and barley malt praline.
An Inspiring Collaboration
We particularly appreciate collaborations like this – they show that signature cuisine can both delight with its presentation and speak with a distinct regional voice. It was a coming together of talents, products, and people who approach local traditions with respect but aren’t afraid to reinterpret them. Congratulations to Sebastian Klamka, Piotr Liskowski, and all the producers involved for creating such a cohesive and flavorful evening.
