Boar meat roulade stuffed with bay mushrooms

Ingredients:

− Boar sirloin

− Boletuses

− Bay boletes

− Chanterelles

− Onions

− Smoked bacon

− Garlic

− Parsley

− Red onion

− Sugar

− Red wine

− Thyme

− Salt, pepper

− Potatoes

− 34% cream

− Nutmeg

− Venison demi glace sauce

Preparation:

Cut peeled potatoes into thin slices, pour cream and season with salt, pepper, nutmeg and garlic – bake until soft and until the vegetables have absorbed all the liquid. Clean the sirloin, and prepare stuffing: fry onions, bacon and mushrooms, add parsley, and season with salt, pepper, and garlic. Leave to cool, then stuff the smashed meat and bake. Combine demic glace sauce with chanterelles, season with rosemary. Caramelise sugar, add red onion cut into wedges, stew in red wine with thyme, season with salt and pepper.
