Filharmonia Restaurant. Unforgettable composition of flavors
Filharmonia (Philharmonic) Restaurant is located on Ołowianka Island on the bank of Motława River, from where stretches a charming view on Długie Pobrzeże (the Long Wharf). The name is no coincidence: not only does the chef cook like a true maestro, but also the restaurant itself neighbors the Polish Baltic Philharmonic.
The restaurant has been operating since 2007. The owners’ philosophy is simple: surprise their guests with different compositions of dishes, their ingredients, and taste.
Although seemingly simple, the task requires finesse and experience from the cooks. As it turns out, the head chef of Filharmonia Restaurant, Mikołaj Gilecki, is more than up to this challenge. He is a self-taught cook, but the fact that the path he has chosen has been the right one can bee seen in his experience – he has 18 years of professional experience.
– The kitchen that I lead is based on my own, original idea. What makes it stand out of the crowd is that we go crazy with different flavors, combining basic, regional products with elements of fusion cuisine. It looks really neat on a plate, and the taste is unlike any other. There’s something new to discover with every bite – says Mikołaj Gilecki.
Delicate, and surprising due to various combinations, flavor of meat reveals itself in two main dishes recommended by the chef. Lamb meat with parsley puree, with mint sauce, sugar peas, and seasonal vegetables on the one hand.
On the other, deer loin with truffle potato, mushrooms, violet cauliflower, yellow and pink beets, and chocolate sauce.
For dessert, lemon tart, coconut coulis, figs, and crystallized chocolate.
Filharmonia Restaurant has constantly been listed as one of Gdańsk’s best restaurants. – This year, we have been awarded one toque from the prestigious Gault&Millau guide. In 2015, on the other hand, we received fist prize in the Night of Restaurants competition – says Karolina Murawska from Filharmonia Restaurant.
Guests praise not only the novelty and surprising combinations of flavors. They also appreciate use of local products (Pomeranian zander, lamb, or deer meat from local suppliers), as well as culinary imagination of kitchen staff. Pates, ice-cream, or sorbets that they prepare are a demanding gourmet’s true paradise.
The restaurant is located in a building whose history dates back to the 19th century. The interior reminds of times when Neo Gothic architecture was in fashion. Preserved Neo Gothic elements, combined with modern elegance, and an enormous, 120-square-meter wall painting stretching throughout three stories produce an original effect. Guests visit Filharmonia Restaurant not only to enjoy unique meals, but also to view Gdańsk from different perspective, and feel the spirit of history that lingers inside buildings on Ołowianka Island.
