Surprisingly tasty combinations. New menu and wine list in Piwna 47 Food&Wine Bar

-Our menu is a typical autumn combination of savoury and sweet flavours. There are some unusual flavour combinations, such as chocolate used as base for meat gravies. The dishes are enriched with citrus fruit, and fruit in general. Although it’s autumn and the menu might seem a bit “heavy” , we still try to adjust the flavours of what we serve, to make it seem less so – says Marcin Faliszek, head chef of Piwna 47 Food&Wine Bar in Gdańsk, which has just launched its new food and wine menu.

-All the recipes are original. I cook up all the ideas myself, I select and compose all the ingredients. Adjusting the flavour is the most important to me, this helps me surprise my guests and create according to the slow food concept. This means that we use as many local products as possible, thus supporting local suppliers. We don’t use intermediates, and we prepare most of the ingredients ourselves – says Marcin Faliszek, head chef of Piwna 47 Food&Wine Bar.

The autumn menu in Piwna 47 Food&Wine Bar restaurant, prepared by the head chef, includes foie gras as starter dishes, in two variations. First one is Pate de Foie Gras, which is in principle a pate made with goose and duck livers. The second one, is a fried foie gras, served with orange emulsion and chutney made with Kashubian strawberry, watermelon, and white mustard. A home-made challah emulsion is a fine complement to this set.

A new item in the autumn menu is the Italian-inspired vitello tonnato, veal in tuna, anchovies and caper sauce.

Another interesting autumn specialty is cream of zucchini, served with home-made truffle olive and goat cheese from a regional supplier.

Main dishes include wild boar bacon with pickled beets with mushroom gravy and groats with raisins and fried pumpkin, and beef tenderloin with black lentils, served with carrot with fois gras and porto gravy.

Wine selection in Piwna 47 restaurant is supervised by its sommelier, Przemysław Antoni Bogdański.

-We pair food with wine in a quite unusual way. There are no strict rules when it comes to pairing food with wine, we are quite flexible so that we can pair one dish with several different kinds of wine. It all depends on what our guests like and prefer – says the sommelier.

-Our new wine list is undergoing a revolution right now. We selected wines that are considered classics, although not widely available – he adds.

Therefore, we will have the opportunity to taste classic wines from the oldest wine region in the world, Georgia. There are also more exotic regions, such as Lebanon. Lesser known wines from countries such as Spain, Israel, or South Africa are also available.

-We have 90 fixed wine list items that we treat our guests to. What is more, each day we have certain surprises for our guests: wines that are not in the menu, but which we consider surprising and would like to share them with our guests – says Przemysław Antoni Bogdański.
