Wealth from the depths of lakes and seas – Meduza fish smokehouse in Gardna Wielka
Słowiński Coast, a picturesque land by the Baltic Sea, is famous for its breathtaking landscapes, and unlimited natural resources. It is no secret that this is the place for any fish amateur to take most out of sea delicacies. The small, family-run fish smokehouse Meduza is located in a small town of Gardna Wielka, and lets you experience perfectly delicious fresh- and saltwater fish.
Upon visiting Gardna Wielka, your nose will direct you towards Meduza fish smokehousem owned by Zbigniew Przysiecki and his family. The aroma of freshly smoked fish is compelling as nowhere else. Fish are smoked using traditional methods using traditional methods, without preservatives, in harmony with nature.
Where else would Zbigniew Przysiecki go fishing if not in the nearby Gardno lake? Separated from the Baltic Sea by a sandy spit, it is a perfect location to catch healthy, freshwater fish. Among fish caught by the fishermen are: bream, roach, perch, pike, eel, crucian carp, tench and, in autumn – sea trout. All these delicacies are ready for tasting in the smokehouse.
Meduza smokehouse was established in the year 2000. Before that, the building was used for growing champignon mushrooms, before being converted into a smokehouse.
– I’m a professional fisherman, so it’s easier for me. I know what goes with what – Zbigniew Przysiecki laughs. – My adventure with fishing began when I was a child. I used to flounder knee-deep in the neighbouring river and catch fish with a fork. This method is forbidden, but this is how it used to be done – he says.
– The job of a fisherman isn’t an easy thing to do. We depend on the forces of nature. This involves working in open space, and the weather is full of surprises. We set out early in the morning in a large group, each of us using their own boat. We spend several hours fishing, then we weigh what we catch, and prepare them for selling. This takes up about ten hours, depending on how much fish we catch – Zbigniew Przysiecki continues.
The Przysiecki family tries to encourage people to taste fish that are considered to be “difficult” , such as bream. This fish, although delicious, isn’t popular due to the large number of fish bones in it. However, marinated, smoked, or fried bream is a real delicacy, found in Meduza fish smokehouse’s offer. The same goes for saltwater fish from the Baltic Sea, such as the plentiful herring or halibut.
Meduza allows us to purchase fish by weight, smoke our own catch or anything we buy in a fish store. The offer is going to be expanded in the upcoming season to fried fish and fish soup.
