Zafishowani Restaurant – this is how fish tradition tastes
‘We have been inspired by Gdansk fish tradition’, this is what Zafishowani owners say about their restaurant located at Długie Pobrzeże in Gdansk. They could not choose a better place to cultivate fish tradition. Right over the Motlava River bank, with a view onto the historic vessel ‘Sołdek’, surrounded by a port town hubbub you can taste the best local fish.
‘Our menu should show that fish means history, and Gdansk serves not only cod and sea trout, but also various kinds of lake fish caught in the Kashubian Area,’ Magdalena Kołada, Zafishowani Restaurant’s manager, says.
Fish is ordered by the restaurant several times a week. It comes from popular suppliers e.g. ‘Koryb’ Company from Puck as well as local suppliers and the market. The herbs, sprouts and regional vegetables are, in turn, delivered by Lawenda Gardening. Goat cheese is ordered at and comes from the Kashubian Goat Farm, well known in Pomorskie Region. In addition, the cooks also take advantage of other experts’ skills. Every day in the morning bread is baked in the kitchen – oat bread including bran with addition of nuts and black cumin. Trout which can be tasted in the home-made paste is smoked here, as well.
The number one fish dish served by Zafishowani Restaurant is halibut on bear’s garlic pesto with caramelized carrot and mashed potatoes beside the Baltic Sea trout with pearl barley and beetroot puree, cucumber and solicornia.
Halibut is a king among the appetizers, namely, marinated pieces of halibut served in herb oils, with a cucumber and horseradish paste. Besides, the guests appreciate salmon tartare served in the company of marinated vegetables, solicornia and olive powder.
For dessert you should taste a cheese cake produced from Kashubian goat’s cheese with addition of hazelnut muss. This delicate and fresh piece of cheese cake enjoys a great interest, especially among foreign customers. A piece of white chocolate tart founded on oatmeal and cranberry is also worth tasting. Its chocolate sweetness is soothed by sea buckthorn gel.
Although the restaurant’s name may be confusing, the Zafishowani cooks offer also meat. The taste buds will go crazy when you order confit goose breast in the skorzonera and cranberry sauce added to the noodles.
However, this is the goose which seems to be a meat hit of Zafishowani Restaurant. This dish enjoyed so many praises in the previous restaurant located in this place (Kokieteria Restaurant) that the master chef could not resign from including it into the menu.
‘I am inspired by Polish cuisine in its modern edition. What counts is the fresh product and appropriate technological process which help to retain the product’s nourishing values and visual qualities. I do my best to preserve the exceptional character of the dish in the simplicity of cooking and respect for the product itself,’ Daniel Chrzanowski, master chef in Zafishowani Restaurant, says. Thanks to his creativity and original approach to food, you can taste the fish flavors of the best quality.
The positive opinion of Zafishowani Restaurant has been worked out by well qualified cooks with a wide experience and culinary sensitivity. They make a good team, being responsible for the Restaurant’s success. Tomasz Guzik – actually, the master chef assistant – is a creative and tough cook, for whom cooking is passion. Another member of the team, Michał Zaborski, gained his experience in Great Britain.
Menu in Zafishowani Restaurant is short. Therefore, we can be sure that the products are always of the best quality. When a particular component is not accessible, it is substituted with another one, the one which grows during the season and is always fresh.
It is worth emphasizing that the local beer fans should appreciate Amber products in the menu. Apart from foreign wines the foreign customers will find Polish labels in the wine card, e.g. Sey Sey Winnica Płochockich, Dolina Bystrzycy Rose or Pinot Noir from Zachowice. You can also be served several kinds of meads which have recently enjoyed more interest and approval.
Finally, Zafishowani means a modern and interesting decoration. The nut-like colors and grey shadows dominate. You can be surprised at the covering which imitates the sett which is a tribute to the contemporary, severe interiors. The table cloth is also modest, as it is associated with grey paper and simplicity, being the motto of the restaurant’s owners. Thanks to cozy boxes in the windows the guests have a chance to relish not only the tastes, but also the view onto the lively seashore, Długie Pobrzeże.
