Brygida Klingenberg runs Klimbergowice agritourism farm in Sztumska Wieś, and is a proud propagator of traditional Prussian cooking.

Brygida Klingenberg is a master of Prussian cuisine and is in a definite minority of people who still remember it. Prussian cuisine is her family’s long time tradition. Her ancestors lived 400 years ago where now Sztumska Wieś is located. Prussian cuisine was familiar to her grandmothers, great-grandmothers, and women from several generations back.

-It just runs in my veins, the passion of Prussian cuisine – laughs Brygida Klingenberg. – This cuisine is simple, as it used to be poor people’s cuisine. The area wasn’t abundant in resources, they had to make do with what they managed to  grow in the field – she says.

Prussian cuisine was based on vegetables, simple meat, and fish. It contained plenty of vinegar and sugar, which was supposed to balance the acid. One of the more popular meals was Konigsberg (Królewiec) meatball soup. Pork meatballs cooked with onion, bay leaf, and allspice, were served with sour cream mixed with flour.  Traditional soups also included many sweet variations, as well as traditional Christmas mushroom and milk and almond soup.

Mrs. Klingenberg also manufactures regional preserves according to a certified recipe. These include beets with cumin, and braised grated beets. There is also pickled pumpkin with cloves, sweet and sour zucchini, and sweet carrot.

Prussian cuisine is remembered only by those, who had its tradition cultivated at home (and that’s a minority), or those who remember the war period and what they used to eat at home. – This happened when I treated some guests to rutabaga soup. They remembered their grandmother giving them rutabaga soup for dinner – says Mrs. Klingenberg.

Aside from poultry or pork, Prussians also ate fish. Mrs. Klingenberg serves fish with an egg-based sauce.

A perfect Prussian dessert consisted of farina with almonds and seasonal fruit, such as raspberries or blueberries, with yolks and whites whisked separately.

Mrs. Klingenberg’s Prussian cuisine can be experienced during various meetings or tasting events. A set of two courses and a dessert costs 25 PLN.

Klimbergowice agritourism farm is open the whole year round. However, due to obvious reasons, the peak of occupancy rate is in spring and summer. The farm offers seven double rooms that, if need be, can be expanded. This allows up to 20 people to take advantage of the accommodation. Sztum area with four lakes and three natural reserves is simply idyllic. The farm comprises a grill spot and a campfire place, a pond with fish, where you can try your luck as a fisherman, a volleyball court, as well as a vegetable garden and children playground. During long, summer evenings you can experience scenic sunsets, sitting on the wooden terrace. If you’d like to go jogging, there is plenty of routes in the nearby forest. Recently, a stud was opened, where you can learn horseback riding under the watchful eye of an instructor. If you find countryside living appealing, then you can learn how to milk a cow, or how to groom a horse.

The owners try to keep the offer as up-to-date as it can be. Therefore, a professional massage session is also included in the offer. A swimming pool is being planned, as well. The entire farm is guarded by an enormous, adorable dog, Beniu, another member of the family.There are also culinary workshops available.

Mrs. Kingenberg eagerly shares her knowledge of Prussian cuisine with others.
