This was no ordinary dinner party. Three chefs from different regions, united by their love of good taste, met at the Mercato restaurant in Gdansk to cook together. How was it? Surprisingly, fun and very tasty.

Mercato Restaurant is a place we are happy to recommend to any lover of good taste. Confirmation of our words is this year’s award for Mercato Restaurant from the Michelin Guide. There you will find excellent food and wine, but also great service. Having known the place for many years, we were happy to accept the invitation to the Chefs Trio dinner, because we know that it would be excellent. 

Dominik Karpik, chef of Mercato restaurant, invited three well-known and respected chefs to cook together. The concept was for them to be chefs from different regions. So they cooked for us, in addition to Dominik Karpik – Przemysław Sieradzki, chef of the Giewont restaurant (awarded a Michelin star), and Wild Chef (Vildakocken) Erick Brännström.

The collaboration between Mercato and Wild Chef pleases us in particular, because last year, as part of the activities of the Pomeranian Regional Tourist Organization, we invited Erick Brännström for a culinary visit to the Partners of our region, which resulted in interesting collaborations with Pomeranian gastronomy.

First, the host of the Mercato restaurant offered mushroom soup, a buttered bun, garlic butter and goose meat. Next, Erick Brännström served Arctic trout with dill, Jerusalem artichoke and horseradish. The third chef, Przemyslaw Sieradzki, served us escalopes with foie gras, a pie characteristic of Podhale cuisine – moskol, and cherry and lavender jam.

Our (and not only our!) heart was stolen by the zander from Dominik Karpik. The delicate fish was served with a buttery beurre blanc sauce, Antonius caviar and salad. In turn, the hearts of our fellow diners were stolen by French lamb with mashed potato, mousseline and pepper sauce from Przemyslaw Sieradzki, and reindeer with mushrooms, berries and potato from Erick Brännström. All the dishes were so tasty that it was hard to choose one’s favorites, and the divided opinions only prove that the variety of flavors and cuisines favor different taste buds. There was something for everyone.

All dishes were complemented by excellent wine – white and red, which was carefully selected to enhance the qualities of all dishes, and the culmination of the dinner – dessert. Apple, bison grass, lemon and white chocolate. Nothing more is needed for happiness.

We were delighted by this more than 3-hour feast. Bravo Dominik Karpik! Bravo Przemyslaw Sieradzki! Bravo Erick Brännström! We look forward to future installments of the Mercato tasting dinners and heartily recommend them to all those who want a Michelin-starred culinary experience.
