If we were to suggest a restaurant in Gdansk that serves good quality meat – Winne Grono would be on our list of recommendations. Here meat plays the main role, so you can be sure that when goose meat appears on your plate – it will be goose meat of the best possible quality.

Winne Grono has changed the formula. We were the first testers of the new concept, in which seasonality determines what the restaurant will serve us. Tastings at Winne Grono will be held in thematic cycles. When there is an announcement about a pork tasting, for example, everything will revolve around it. When the owner gets the perfect lamb, it will determine the nature of the menu. So you need to keep an eye on the restaurant’s social media, stay alert and make reservations.

Regional goose that delights

Today we’re talking about goose, because it’s November and it was the queen of our evening. More precisely – Kartuska goose, not often found in Poland. If someone is familiar with meat, he will certainly say – wow, this is just something! Kartuska goose is an old Polish breed, which you won’t buy in the market. To get it, you need to make an effort, have contacts to a good supplier and above all – you must care. 

Our tasting began with an okrasa of homestead goose, or more precisely – obona. Because obona is okrasa in Kashubian, or as some like to say – tartar. Added to the raw goose was a bit of freeze-dried raspberries and bread from the famous Gdansk baker Ryszard Majchrowski. And that’s it.

– It stands up for simplicity – said the owner of the Winne Grono, Arkadiusz Onasch.

The second in front of us was the broth. There was a good, heavy, goose broth. It came with some al dente carrots, green parsley and flatbread noodles, handmade and traditional.

– Just like at my grandmother’s house! – enthused loudly Michael, one of the participants in the tasting.

Then it came in – the star of the evening – confit regional goose. The goose was served to us accompanied by organic cabbage with dill and mashed potatoes with lard and smoked bacon.

The culmination of every tasting dinner is dessert. The dot over the i on this evening was an almond Danzig cake from a recipe taken from one of the oldest Danzig culinary books, by Marie Rosnack. As you can see, there were no coincidences in this feast – everything was planned in such a way that the good product harmonized with the rich history.

Gdansk vodkas and liqueurs with history

But that’s not all! The event was laced with a story by Arkadiusz Onasch on Old Gdansk cuisine, which was complemented by a tasting of liqueurs from the Gdansk Historic Flavors Factory. If you’re not yet familiar with this concept – it’s worth catching up, as it brings the times together, materializing in the form of characterful liquors. 

The Gdansk vodkas and liqueurs on offer are the result of long research and efforts to recreate the true and original flavors of the place. We tested a few of them: the genuine Goldwasser with floating gold pieces, the great-grandfather of gin – Machandel, which pairs best with the company of dried plum, the Mennonite orange Pomeranzen, and Kurfürsten, which aids digestion. It is worth mentioning that both Goldwasser and Machandel were awarded a Pearl by the Polish Chamber of Regional and Local Product.

Arkadiusz Onasch – lover of good quality

Enthusiasts do not have it easy in life, as they often have to fight for their ideas. However, when they come across an informed customer – they won’t lose him quickly. Such is the daily life of Arkadiusz Onasch – owner of the Winne Grono, who has set feeding people real food as one of his overriding professional, if not life, goals. At a time when most people are accustomed to the taste and price of market meat, he, true to his ideals, goes against the grain, hoping that the longing for real taste, so familiar to our ancestors, smoulders within us.

This information is not to be missed! Winne Grono Restaurant was the first restaurant in Poland to be certified to use the Rasa Rodzima quality mark for meat dishes served. This means that you will taste meat here from species of livestock, perfectly adapted to local climatic conditions and raised in an ethical manner, according to multi-generational traditions.
